Coca-Cola Chicken Wings
Ingredients
- 2 1/2 pound (1134 grams) chicken wings
- 1/2 teaspoon salt
- 1 large lime
- 2 stalks scallions
- 16.9 ounce (479 grams) bottle Coca-Cola
- 1/4 cup soy sauce
- 6 cloves garlic (smashed)
- 1 2-inch piece ginger (sliced)
- 1 teaspoon cornstarch
- 2 tablespoons unsalted butter
Instructions
- Preheat oven to 200°C (400°F). Prick the back of the chicken wings with a sharp knife and pat them dry with paper towels. Place the chicken wings on a baking pan lined with parchment paper and evenly sprinkle them with salt. Bake for 25 minutes until lightly browned and just cooked.
- Meanwhile, remove 4 strips of lime zest using a vegetable peeler and cut the lime in half. Squeeze out 2 tablespoons of fresh lime juice into a saucepan. Chop the scallion in half and add the white bottom part to the saucepan. Finely chop the green part and set aside. Then, add lime zest, cola, soy sauce, garlic, and ginger to the saucepan.
- Bring the cola mixture to a boil, then reduce the heat and simmer for 20 minutes without covering. Continue to cook the sauce until it thickens and reduces to about half. Drain solids. In a small bowl, whisk together cornstarch with 1 tablespoon of water. Stir into the cola mixture and cook for 3 minutes. Then, turn off the heat. Pour half the mixture into a large bowl and mix well with butter. Reserve the remaining sauce for serving.
- Remove chicken wings from the oven and toss them in the cola mixture. Then, return the chicken wings to the baking pan and bake for 5 minutes until dark golden brown and glossy.

It’s 200 Celcius/400 Fahrenheit. If using the air fryer, you will need to reduce the cooking time and also temperature. Please set it for 18-20 mins at 180C/375F, and check to make sure it’s cooked through.
