Hi Ken. Glad that you liked the cake. Perhaps your oven temperature runs a little lower. Most of our ovens tend to run either hotter or cooler than the actual temperature.

Hi. Coconut cream is unsweetened and very thick, and used in both savoury and some sweet dishes. However, cream of coconut is sweetened, and meant to be used in only desserts.

Hi Gabe. Pandan leaves are usually found in the frozen section of most Asian markets. But yes, in a pinch you can use a tiny bit of pandan essence. However, it is not quite the same as using the actual leaves.
